Less known but still widespread, these knives require entirely hand sharpening. Equipped with a half-moon blade, they are preferred by some people for chopping food. Due to their unconventional shape, they must be sharpened entirely by hand using different grades of sharpening stones.
This work requires precision and patience as it involves respecting a certain cutting angle that cannot be achieved with a grinder (even with a water grinder) without risking damaging the knife’s arc.
